You can tell it&#8217;s early in the canning season, because I entertained the idea of cutting the cucumbers with the crinkle cutter.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img decoding=\"async\" loading=\"lazy\" width=\"320\" height=\"240\" src=\"http:\/\/cocktailfarmers.com\/wp-content\/uploads\/2020\/07\/IMG_0195.jpg\" alt=\"\" class=\"wp-image-594\" srcset=\"http:\/\/cocktailfarmers.com\/wp-content\/uploads\/2020\/07\/IMG_0195.jpg 320w, http:\/\/cocktailfarmers.com\/wp-content\/uploads\/2020\/07\/IMG_0195-300x225.jpg 300w\" sizes=\"(max-width: 320px) 100vw, 320px\" \/><\/figure><\/div>\n\n\n\n<p>The struggle with these pickles is that you have to slice and salt them, and leave them for an hour to drain before finishing the recipe. And I always forget that &#8211; so when I carve out the time to do them, suddenly I have an hour in the middle of it where I need to do something else while I wait, like laundry. I never learn.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img decoding=\"async\" loading=\"lazy\" width=\"320\" height=\"240\" src=\"http:\/\/cocktailfarmers.com\/wp-content\/uploads\/2020\/07\/IMG_0197.jpg\" alt=\"\" class=\"wp-image-595\" srcset=\"http:\/\/cocktailfarmers.com\/wp-content\/uploads\/2020\/07\/IMG_0197.jpg 320w, http:\/\/cocktailfarmers.com\/wp-content\/uploads\/2020\/07\/IMG_0197-300x225.jpg 300w\" sizes=\"(max-width: 320px) 100vw, 320px\" \/><\/figure><\/div>\n\n\n\n<p>The recipe we use is an old American recipe, that came from my Danish mother-in-law. We used my family&#8217;s recipe for a number of years, but then had a jar of hers and decided that was the better recipe. We&#8217;ve used it a couple of years now and everyone loves it.<\/p>\n\n\n\n<ul class=\"wp-block-gallery columns-2 is-cropped wp-block-gallery-1 is-layout-flex\"><li class=\"blocks-gallery-item\"><figure><img decoding=\"async\" loading=\"lazy\" width=\"320\" height=\"240\" src=\"http:\/\/cocktailfarmers.com\/wp-content\/uploads\/2020\/07\/IMG_0200.jpg\" alt=\"\" data-id=\"596\" data-link=\"http:\/\/cocktailfarmers.com\/?attachment_id=596\" class=\"wp-image-596\" srcset=\"http:\/\/cocktailfarmers.com\/wp-content\/uploads\/2020\/07\/IMG_0200.jpg 320w, http:\/\/cocktailfarmers.com\/wp-content\/uploads\/2020\/07\/IMG_0200-300x225.jpg 300w\" sizes=\"(max-width: 320px) 100vw, 320px\" \/><\/figure><\/li><li class=\"blocks-gallery-item\"><figure><img decoding=\"async\" loading=\"lazy\" width=\"320\" height=\"240\" src=\"http:\/\/cocktailfarmers.com\/wp-content\/uploads\/2020\/07\/IMG_0201.jpg\" alt=\"\" data-id=\"597\" data-link=\"http:\/\/cocktailfarmers.com\/?attachment_id=597\" class=\"wp-image-597\" srcset=\"http:\/\/cocktailfarmers.com\/wp-content\/uploads\/2020\/07\/IMG_0201.jpg 320w, http:\/\/cocktailfarmers.com\/wp-content\/uploads\/2020\/07\/IMG_0201-300x225.jpg 300w\" sizes=\"(max-width: 320px) 100vw, 320px\" \/><\/figure><\/li><\/ul>\n\n\n\n<p>The recipe:<\/p>\n\n\n\n<ul><li>8 cups cucumbers, sliced thin<\/li><li>3 cups onions, sliced thin or chopped*<\/li><li>4 tbsp salt<\/li><\/ul>\n\n\n\n<p>Sprinkle salt over\nvegetables and let stand 1 hour<\/p>\n\n\n\n<p>Drain and add<\/p>\n\n\n\n<ul><li>2 cups vinegar<\/li><li>2 tsp turmeric powder<\/li><li>2 tsp celery seed<\/li><li>3\u201d stick of cinnamon<\/li><li>3 cups white sugar<\/li><li>4 green peppers, chopped fine*<\/li><\/ul>\n\n\n\n<p>Bring syrup\nto a boiling point, just simmering, for 15-20 minutes.&nbsp; Pour over cucumbers in hot sterilized jar,\nand process for 10-15 minutes.<\/p>\n\n\n\n<p>*Use half as many as called for, or omit entirely if you don&#8217;t like the taste<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img decoding=\"async\" loading=\"lazy\" width=\"320\" height=\"240\" src=\"http:\/\/cocktailfarmers.com\/wp-content\/uploads\/2020\/07\/IMG_0202.jpg\" alt=\"\" class=\"wp-image-598\" srcset=\"http:\/\/cocktailfarmers.com\/wp-content\/uploads\/2020\/07\/IMG_0202.jpg 320w, http:\/\/cocktailfarmers.com\/wp-content\/uploads\/2020\/07\/IMG_0202-300x225.jpg 300w\" sizes=\"(max-width: 320px) 100vw, 320px\" \/><figcaption>The results<\/figcaption><\/figure><\/div>\n\n\n\n<p>8 cups of cucumbers netted us 4 pint jars of pickles. Which is a manageable amount to can; as the season runs on we will end up doing double and triple batches, and most of Sunday afternoon into evening will be spent on canning.
